Dinner Done, Thai Chicken Pasta

Tampa, Florida - Looking for a Thai dish that you can make at home. Audra Nasser of Tampa's Dinner Done creates a meal full of taste, Thai Chicken Pasta.

Thai Chicken Pasta

You'll Need:

· 2 lbs boneless skinless chicken breast, in bite-sized pieces

· 2 Tbsp olive oil

· ¾ cup diced onions

· ½ cup diced red bell pepper

· 2 Tbsp soy sauce

· ¼ cup hoisin sauce

· ¼ cup peanut butter

· 1 Tbls minced ginger

· 1 Tbls red curry paste

· 1 cup half and half

· 2 tsp corn starch

· ¾ cup diced water chestnuts

· 1 ½ cup fresh snow peas

· 1 cup julienne carrots

· 1 lb linguine, cooked (reserve some pasta water to thin sauce if desired)


To Prepare:


Stir cornstarch into half and half.  In a bowl, add hoisin, peanut butter, Red Curry Paste and half & half.  Stir to mix well and then add in water chestnuts, snow peas, carrots and set aside.


In a large skillet over medium-high heat, add olive oil, ginger, diced onion, red pepper, and soy.  Sauté 1-2 minutes until onions are translucent.  Add chicken chunks and continue cooking until chicken is almost cooked throughout, about 5 minutes (depends on size of chunks!).  Add sauce and let simmer 3-5 minutes more.  If the sauce is too thick, stir in some of the reserved pasta water.  Toss linguine and sauce together just before serving.



Did you know?  The water chestnut, commonly found in Chinese cuisine, is not a nut, but is an aquatic vegetable that grows in marshes.



Nutritional Info:  Serves 6.  Sauce: 325 cal, 8.6g fat (2g sat), 75mg chol, 650mg sodium, 18g carb, 3.6g fiber, 34g protein.  Linguine:  238 cal, 1g fat (0.2g sat), 0g sodium, 0mg chol, 48g carb, 1.5g fiber, 8.2g protein. (assumes no salt added to pasta.) Note that nutritionals are an estimate and will vary based on the actual ingredients purchased and used.
