Tampa, Florida - Looking for a Thai dish that you can make at home. Audra Nasser of Tampa's Dinner Done creates a meal full of taste, Thai Chicken Pasta.
Thai Chicken Pasta
· 2 lbs boneless skinless chicken breast, in bite-sized pieces
· 2 Tbsp olive oil
· ¾ cup diced onions
· ½ cup diced red bell pepper
· 2 Tbsp soy sauce
· ¼ cup hoisin sauce
· ¼ cup peanut butter
· 1 Tbls minced ginger
· 1 Tbls red curry paste
· 1 cup half and half
· 2 tsp corn starch
· ¾ cup diced water chestnuts
· 1 ½ cup fresh snow peas
· 1 cup julienne carrots
· 1 lb linguine, cooked (reserve some pasta water to thin sauce if desired)
Stir cornstarch into half and half. In a bowl, add hoisin, peanut butter, Red Curry Paste and half & half. Stir to mix well and then add in water chestnuts, snow peas, carrots and set aside.
In a large skillet over medium-high heat, add olive oil, ginger, diced onion, red pepper, and soy. Sauté 1-2 minutes until onions are translucent. Add chicken chunks and continue cooking until chicken is almost cooked throughout, about 5 minutes (depends on size of chunks!). Add sauce and let simmer 3-5 minutes more. If the sauce is too thick, stir in some of the reserved pasta water. Toss linguine and sauce together just before serving.
