Dinner Done: Pork Tacos with Cilantro Lime Sauce

Want to spice up your dinner plans? Try this flavorful meal, Pork Tacos with Cilantro Lime Sauce.

You'll Need:

  • Pork Tenderloin (about 2 lbs)
  • 1 cup tomato strips
  • ½ cup lime juice, divided
  • 1 tsp minced jalapeno (or omit for mild!)
  • 1 tbls fresh minced garlic
  • 1 tsp salt
  • 2 tsp chili powder
  • ½ cup diced onion
  • ½ cup fresh chopped cilantro, divided
  • 1 cup sour cream
  • 12 tortillas

To Prepare:

First, prepare a Cilantro-Lime Sauce by mixing sour cream, ¼ cup cilantro and 3 Tbsp lime juice.  Refrigerate while the pork cooks.

In a crock pot, add all remaining ingredients except the tortillas.  Cook on high heat for 3-5 hours until the pork is tender.  Shred the pork, incorporating all of the juices it cooked in as well.

Serve in warmed tortillas, topped with Cilantro-Lime Sauce.  This is a great dish to get creative with... other delicious toppers include salsa, sliced avocado, red onions and jalapeno peppers!

Nutrition Notes:  Substitute lettuce leaves for tortillas to lower calories and fat!
