Audra Nasser of Tampa's Dinner Done creates a rich and great tasting dish that was created by Italian fisherman, Cioppino.
½ lb mild white fish cut into bite-size cubes
1 lb. shrimp
½ lb. bay scallops
½ lb crab meat
2 tbsp olive oil
1 ½ cups onion
2 Tbsp minced garlic
1 cup diced bell pepper
1 28oz can of diced tomatoes, with juice
1 28oz can crushed tomatoes
1 6oz bottle of clam juice
¾ cup dry red wine
¾ tsp red pepper flakes
1 bay leaf
1 tsp dried oregano
1 tsp salt
½ tsp pepper
In a large saucepot over medium heat, add olive oil. Add garlic, onion and diced pepper and sauté until onions are translucent.
Stir in diced and crushed tomatoes, clam juice, wine, red pepper flakes, bay leaf, oregano, salt and pepper. Reduce heat, cover and simmer 30 minutes. Add seafood and, over medium heat, simmer about 5 minutes until seafood is cooked throughout.
Did you know? Cioppino was originally developed by Italian fishermen in the San Francisco area in the late 1800s. They would prepare it using the catch of the day.
