This "chicken curry in a hurry" is fast, easy way to add more turmeric and spice to your life.

The sauce tastes fresh thanks to the fresh herbs! This is one of our favorite recipes.
1 teaspoon turmeric
2 tablespoons Indian curry paste
3 tablespoons unrefined, coconut oil
1/2 bunch basil, leaves chopped
1/2 bunch cilantro, leaves chopped
1 (13.5-ounce) cans light coconut milk
1 teaspoon honey or agave (optional--only if you want it slightly sweet)
2 tablespoons soy sauce
Freshly ground black pepper
4 boneless, skinless chicken breasts, cut into strips
Steamed brown or jasmine rice
Prepare & slice chicken how you prefer (I grill mine).
In a sauté pan, mix together coconut oil, turmeric and curry paste on low heat.
Add chopped basil & cilantro, light coconut milk, soy sauce and honey (optional) and season with salt & pepper over medium heat.
Pour mixture over steamed rice & chicken. Save some for leftovers!
