Remember the days of chicken and egg salad covered in creamy mayonaise?
You can still eat those sandwiches without all the fat.
Who knew non-fat, plain yogurt mixed with stone ground mustard can deliver quick and easy, chicken salad you'd swear it was the real deal?

Here's what you need:
-Can of all white chicken meat (or if you have time, grill a chicken breast)
-Tart, green apple
-5 tablespoons of non-fat, plain yogurt (I like Greek yogurt, but regular will work too)
-1 to 2 tablespoons stoneground mustard
-Small handful of mixed nuts (or you can use only cashews or walnuts)
-Spinach (or toast bread to make a sandwich)
Mix yogurt and mustard with your chicken to get the taste you like.
Add more mustard if you want a "spicy kick." Dice apple and chop nuts. Mix everything together. Salt and pepper to taste.
Scoop on bed of spinach or stuff into toasted bread. You can make extra for later. It still tastes great!
*My mom uses the yogurt/mustard to make egg salad sandwiches. My dad has NO idea it's not mayo!
