The first day of our anniversary trip to Peru, I noticed a little lymph node pop up. Don't you hate that?
I thought, "Uh oh, no WAY am I going to be sick on vacation!"
(In "classic Heather style" I stayed up late to finish a million things before I started my vacation! Now, my body was telling me to SLOW DOWN.)
A Peruvian suggested I start eating this healing soup at every meal.
Mike & I ate it before dinner every day. We never got sick and I actually had a lot of energy! I got up everyday around 6:00 a.m.!! I work late so that was a true miracle!
As we head into flu season, you might want to whip up a batch for its preventative properties. It takes a lot like chicken soup.
I hope you like garlic! Integrative medicine doctors have always recommended garlic for its natural antibacterial and antiviral properties. Ideally, they suggest you eat at least one raw clove a day, but it can have a "kick" raw.
The Quinoa soup is a great way to prevent colds or keep your immune system strong. Garlic is a powerful germicide.
If you don't want to eat chicken, quinoa is a complete protein. (Quinoa is a seed you can find at Whole Foods or any health food store.)

Here's what you need:
-2 tablespoons olive oil
-1 cup chopped carrots
-1 cup chopped celery
-1 cup onions
-4 cups water
-1 whole head of garlic (cloves peeled & coarsely chopped)
-1 rotisserie chicken (already cooked to save time)
-6 cups chicken broth
-1/2 cup quinoa (rinse before you add it)
-1/2 cup chopped flat parsley
1/2 teaspoon fresh black pepper
1/2 teaspoon sea salt
In a large pot, heat olive oil over medium heat. Add carrots, celery and onions & garlic. Saute for 4 minutes.
Stir in water and chicken broth. Bring to boil.
Toss in chopped chicken and rinsed quinoa, parsely, salt and pepper. Cover the pan, reduce heat to low and cook for 20 minutes.
