Warm weather makes me want to eat my veggies. I like to buy sweet tomatos and crisp cucumbers. Toss in some tangy feta cheese, kalamata olives and you have an easy, Greek salad.
This salad is a great way to cut back on eating meat every day. You can always add grilled chicken to it, but the flavors are strong, you won't miss it.

Here's what you need:
4 large ripe tomatos--chopped
2 medium cucumbers--seeded & chopped
1 purple onion peeled & chopped
1 bundle fresh cilantro--chopped fine
4 oz. low-fat feta cheese (or fresh goat's milk cheese you can crumble. It's easier to digest. I found it at Whole Foods Market)
2 cloves fresh garlic--chopped fine or use garlic press
2 Tbsp dried oregano
2 Tbsp fresh lemon juice
Tbsp extra virgin olive oil
1 cup black pitted kalamata olives
Sea salt & black pepper to taste.
Place cut vegetables and herbs in a bowl. Drizzle lemon juice and olive oil over salad. Add olives & toss gently.
That's it! You can eat this salad the next day for lunch. It will stay crisp.
